Each of the truffles have a bit of a flaw (the chambourd truffles should've had more cream, the mocha-espresso truffles should've had more chocolate and/or a bit less coffee brandy, and a higher grade of cocoa powder for the coating, and I STILL can't do decent bases for hard chocolate shells), but I'm feeling good--they have that OOMPH that my last batch didn't. And because I had slightly more mocha-espresso choc than I should've, each box has seventeen pieces. An "Oaken Dozen".
Oh, and I was worried that I was making the white chocolate molds too thin, but it turned out really neat--when I added the dark chocolate filling, the dark began to show through a little in streaks and swirls, in a yummy marbleized pattern. I take back all the nasty things I said about working with white chocolate!
Now I just need the gift boxes to survive the day in the fridge and the bus ride to Harvard Square...
