Adding peach-flavored brandy to the truffle ganache worked out even better than I'd hoped! This makes me think good thoughts about the cherry liqueur ganache, currently cooling.

Still iffy about the taste of the chocolate I'm using, the Schaffenbergen or whatever it's called--it melts quickly and is easy to use, but the flavor doesn't quite have the 'legs out from under you' oomph I'm looking for. It's just, you know, there. Hmmm.

(baba ganoush? i think? is eggplant... it's terribly, especially when you were explecting it to be hummus. but then, i REALLY don't like eggplant)

Blasphemy! Scharffenberger is the OMG *best* chocolate.

Also, I strongly recommend Chambord in your chocolate. And then you must send me some. But it needs to be made with Scharffenberger.

My other theory is that the truffle recipe I'm using, with the heavy cream, is a little less potent than the recipe that uses unsalted butter. That's what I'll be experimenting with next.

That could very well be. Adding the cream would be theoretically similar to making it into a kind of milk chocolate.

Hmmm. Butter in chocolate. I'd never considered that...
